It’s Ramadan and every Ramadan I prepare a traditional dessert to mark the beginning of this auspicious month. This time thanks to my duties i was quite late. And since I am still working shifts, i decided on something quick yet delicious.
Konafah is a middle eastern dessert, made with a noodle like pastry and various kinds of fillings. They vary from cream to ricotta cheese to nuts and cinnamon etc. Me and my husband are particularly fans of the cream (kashta, as known in arabic) variety.
It literally took me no time to prepare the dessert for iftar and it tasted absolutely yummers!
- 1/2 packet Konafah dough
- 1 tin of cream, lightly beaten (2 if you want a thicker layer of cream)
- 1/4 cup olive oil or unsalted butter
- 1 cup sugar
- 1/2 cup water
- 2tbps lemon juice
- 1pinch of Saffron
- Seeds of 3-4 cardamoms
- Combine the water, sugar, lemon juice, saffron and cardamoms and simmer until all the sugar is dissolved. Let it cool. Keep stirring occasionally while cooling to make sure it is not solidifying.
- Crumble the konafah dough by hand and add the olive oil to it. Mix thoroughly.
- Now grease a round baking tray. Layer half of the konafah as the base. Now pour the cream over it, making sure it is spread until the edges. Layer the other half of konafah dough over it.
- Bake in a preheated oven at 180 degrees for 20 mins. In the last 5 minutes increase the temperature to 220 degrees so that the dough turns golden brown.
- Once it is out of the oven, immediately pour the sugar syrup over the hot konafah. Sprinkle with chopped pistachios at this point if preferred.
- Serve hot or cold according to preferance!
